Ingredients

✔️ 12 oz smoked sausage (Andouille or Kielbasa), sliced
✔️ 1 cup long-grain white rice, rinsed
✔️ 1 red bell pepper, diced
✔️ 1 green bell pepper, diced
✔️ 1 medium onion (yellow or white), diced
✔️ 3 cloves garlic, minced
✔️ 1 ½ cups chicken broth
✔️ 2 tbsp Cajun seasoning
✔️ 1 tbsp olive oil
✔️ Salt & pepper to taste
✔️ Optional: Fresh parsley, green onions, hot sauce for serving

Instructions

1️⃣ Prep Ingredients – Slice sausage, dice peppers & onion, mince garlic, and rinse rice under cold water.
2️⃣ Brown the Sausage – Heat olive oil in a large skillet over medium heat. Cook sausage 5-7 min until crispy. Remove and set aside.
3️⃣ Sauté the Veggies – In the same skillet, cook onions & bell peppers for 3 min until softened. Add garlic and sauté 1 more min.
4️⃣ Toast the Rice – Stir in rice and toast for 2 min until fragrant.
5️⃣ Cook the Rice – Add chicken broth & Cajun seasoning, bring to a boil. Reduce heat, cover, and simmer 15-20 min until rice is tender.
6️⃣ Finish It Off – Stir sausage back in, cook for 3-5 min to meld flavors.
7️⃣ Serve & Enjoy! – Garnish with parsley, green onions, and hot sauce for an extra kick!
