Ingredients

✅ 4 slices center-cut bacon
✅ 1 white onion, finely diced
✅ 1 poblano or bell pepper, finely diced
✅ 2 cloves garlic, minced or grated
✅ 1 lb raw turkey breakfast sausage*
✅ 1 packet chili seasoning
✅ 28 oz can fire-roasted crushed tomatoes
✅ 3-4 cups beef broth (adjust for consistency)


Instructions

1️⃣ Cook the Bacon: In a Dutch oven over medium heat, cook bacon until crispy. Transfer to a paper towel.
2️⃣ Sauté the Veggies: In the same pot, cook onion & pepper in bacon grease for 2-3 min. Add garlic and cook until fragrant.
3️⃣ Brown the Meat: Add turkey sausage and break it apart, cooking until fully browned.
4️⃣ Simmer: Add chili seasoning, crushed tomatoes, and beef broth. Chop the bacon and stir it in. Bring to a boil, then reduce heat and simmer covered for 45-60 min.
5️⃣ Serve: Enjoy with hash browns, eggs, pico de gallo, or your favorite toppings!
