For the Chicken:

  • 2 large chicken breasts (about 500g total), sliced in half
  • 1/4 cup (40g) all-purpose flour
  • 1 tsp salt
  • 1/2 tsp each: onion powder, garlic powder, black pepper
  • 1 tbsp each: olive oil, unsalted butter

For the Sauce:

  • 2 shallots, finely diced
  • 34 oz (100–120g) baby spinach (optional)
  • 3/4 cup (180ml) chicken stock
  • 1 pack (5 oz/150g) Boursin Garlic & Herbs cheese, at room temp
  • Olive oil, salt & pepper (as needed)

Instructions

1️⃣ Prepare the Chicken – Slice the chicken breasts horizontally to create 4 thinner pieces. In a shallow dish, whisk together flour, salt, onion powder, garlic powder, and black pepper. Coat each piece in the flour mixture and set aside.

2️⃣ Sear the Chicken – Heat olive oil and butter in a large pan over medium-high heat. Cook the chicken for a few minutes on each side until golden and nearly cooked through. Remove from the pan and set aside.

3️⃣ Sauté the Shallots & Spinach – (Optional) Add spinach and sauté for 30 seconds, then remove. In the same pan, add shallots and cook until soft and golden.

4️⃣ Make the Sauce – Pour in the chicken stock and stir in the Boursin cheese until it melts into a creamy sauce. Let it simmer and thicken slightly.

5️⃣ Bring It Together – Stir in the spinach (if using) and any resting juices from the chicken. Simmer briefly, then return the chicken to the pan, spooning the sauce over it. If needed, adjust thickness by adding more stock or simmering longer.

6️⃣ Taste & Serve – Adjust seasoning as needed and serve warm with mashed potatoes, rice, or roasted potatoes.
