Ingredients

✅ 2 pints cherry tomatoes
✅ 2 (5.2 oz) packages Boursin Garlic & Fine Herbs cheese
✅ 4 cloves garlic, minced
✅ ¼ cup extra virgin olive oil
✅ ½ tsp crushed red pepper flakes
✅ 1 tsp Italian seasoning
✅ Salt & freshly ground black pepper (to taste)
✅ 16 oz penne pasta
✅ 2 cups baby spinach, roughly chopped
✅ ½ cup reserved pasta water
✅ Fresh basil leaves, for garnish
✅ Grated Parmesan cheese, for serving


Instructions

1️⃣ Roast the Tomatoes & Cheese:

  • Preheat oven to 400°F.
  • In a 9×13-inch baking dish, add cherry tomatoes, Boursin cheese, garlic, olive oil, red pepper flakes, Italian seasoning, salt, and pepper. Toss to combine.
  • Bake for 30-35 minutes, until tomatoes burst and cheese is melted.

2️⃣ Cook the Pasta:

  • Bring a large pot of salted water to a boil. Cook penne until al dente, according to package directions.
  • Reserve ½ cup of pasta water, then drain the pasta.

3️⃣ Make the Sauce:

  • Remove the baking dish from the oven.
  • Using a fork, mash the tomatoes and garlic into a creamy sauce.

4️⃣ Combine & Serve:

  • Add cooked pasta and chopped spinach to the baking dish. Toss well to coat in the sauce.
  • Stir in reserved pasta water, a little at a time, until the sauce is silky.
  • Taste and adjust seasoning if needed.
