Ingredients
🥩 1 ½ lbs ground beef
🧅 1 medium onion, diced
🧄 2 cloves garlic, minced
🍅 1 can (14.5 oz) diced tomatoes
🌶 1 can (10.75 oz) red enchilada sauce
🫘 1 can (15 oz) black beans, drained & rinsed
🌽 1 can (15 oz) corn, drained
🍚 1 cup cooked rice
🌶 1 tsp Slap Ya Mama seasoning (or Cajun seasoning)
🌶 1 tsp chili powder
🌿 1 tsp ground cumin
🧄 1 tsp garlic powder
⚫ 1 tsp black pepper
🔥 ½ tsp red pepper flakes (optional for heat)
🧀 1 ½ cups sharp cheddar cheese, shredded
🌿 ⅓ cup chopped cilantro
🟢 ¼ cup sliced green onions
Instructions
1️⃣ Preheat & Prep
- Preheat oven to 350°F (175°C).
- Spray a 3-quart casserole dish with non-stick cooking spray.
2️⃣ Cook the Beef & Onions
- In a large skillet or Dutch oven, cook ground beef & onions over medium heat until beef is browned and onions are soft.
- Add garlic and cook for 2 more minutes.
- Drain excess fat and return to the pan.
3️⃣ Mix the Ingredients
- Stir in diced tomatoes, enchilada sauce, black beans, corn, rice, and seasonings.
- Mix well and bring to a gentle simmer.
- Cover and cook for 10 minutes, stirring occasionally.
4️⃣ Assemble the Casserole
- Spoon the mixture into the prepared casserole dish.
- Sprinkle with shredded cheddar cheese.
5️⃣ Bake & Serve
