For the Skewers:

  • 2 lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • ½ tsp black pepper

For the Bang Bang Sauce:

  • 1¼ cups mayonnaise
  • ⅔ cup Thai sweet chili sauce
  • 1 tbsp Sriracha (or to taste)
  • 2 tbsp honey

Instructions

1️⃣ Prepare the Chicken: In a large bowl, toss the chicken pieces with olive oil, paprika, garlic powder, onion powder, salt, and black pepper. Thread 4-5 pieces onto each skewer.

2️⃣ Make the Sauce: In a small bowl, whisk together mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Set aside half of the sauce for serving.

3️⃣ Grill or Cook:

  • Grill: Cook skewers over medium-high heat, turning occasionally, until the chicken reaches an internal temperature of 165°F (about 10 minutes).
  • Air Fryer: Air fry at 400°F for 11-12 minutes, flipping halfway.
  • Stovetop: Cook in a skillet over medium-high heat until fully cooked.

4️⃣ Sauce & Serve: Brush the cooked skewers with the reserved Bang Bang sauce and garnish with chopped parsley or green onions.
