Ingredients
For the Meatballs:
1 lb cooked salmon, flaked
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
2 garlic cloves, minced
1 egg
2 tbsp fresh parsley, chopped
Salt and pepper to taste
For the Avocado Sauce:
1 ripe avocado
1/4 cup Greek yogurt
Juice of 1 lime
1 garlic clove
Salt and pepper to taste
Water to thin as needed
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a bowl, combine all meatball ingredients. Mix gently until just combined.
Roll into small balls and place on the baking sheet.
Bake for 15–18 minutes, until golden and firm.
Meanwhile, blend all sauce ingredients until smooth. Add water to reach desired consistency.
Serve meatballs warm with a drizzle of avocado sauce or on the side for dipping.
