Description
This Thai-inspired baked pineapple salmon is a one-pan wonder that’s ready in just 20 minutes! The sweetness of pineapple, the zing of chili sauce, and the richness of hoisin and butter create an incredible balance of flavors. Plus, with minimal cleanup, it’s perfect for a quick yet impressive dinner!
Ingredients
✔️ 2 ½ lbs side of salmon
✔️ Salt & pepper, to taste
✔️ 1 can pineapple slices (drained, reserve ¼ cup juice)
✔️ ½ cup sweet chili sauce
✔️ ¼ cup unsalted butter, melted
✔️ 4 tbsp hoisin sauce
✔️ 2 tbsp fresh lemon juice
✔️ 3 garlic cloves, minced
✔️ 2 tbsp fresh cilantro, roughly chopped
✔️ Lime slices (for serving)
Instructions
1️⃣ Preheat oven to 375°F (190°C). Line a baking sheet with nonstick foil.
2️⃣ Place salmon on the baking sheet and season with salt & pepper.
3️⃣ Arrange pineapple slices underneath the salmon.
4️⃣ In a small bowl, whisk together:
✅ Sweet chili sauce
✅ Melted butter
✅ Hoisin sauce
✅ Minced garlic
✅ Lemon juice
✅ Reserved pineapple juice
5️⃣ Pour the sauce mixture over the salmon.
6️⃣ Bake for 15 minutes or until flaky and cooked through.
7️⃣ Optional: Broil for the last 5 minutes for a delicious charred finish.
8️⃣ Garnish with fresh cilantro and serve with lime slices.
Notes
✔️ Use pineapple slices (not chunks) for easy serving.
✔️ Lay salmon flat on the tray for even cooking.
✔️ If salmon is too long, cut & place separately rather than folding under.
✔️ No nonstick foil? Spray the baking sheet to prevent sticking.
