Ingredients
For the Chicken:
✅ 6 cups cornflakes (use gluten-free if needed)
✅ ¼ cup grated parmesan cheese
✅ 1 tsp smoked paprika
✅ ½ tsp onion powder
✅ ½ tsp garlic powder
✅ 2 large eggs, beaten
✅ 2 tbsp hot sauce
✅ 2 lbs chicken breast tenderloins
✅ Extra virgin olive oil, for drizzling
For the Hot Honey:
✅ ½ cup honey
✅ 2-3 tbsp hot sauce
✅ 1-3 tsp cayenne pepper
✅ ¾ tsp chipotle chili powder
✅ ½ tsp garlic powder
✅ ½ tsp onion powder
✅ Sea salt
✅ Fresh thyme, cilantro, or parsley (for garnish)
Instructions
1️⃣ Preheat oven to 425°F and line a baking sheet with parchment paper.
2️⃣ Prepare the Coating: In a food processor, blend cornflakes, parmesan, paprika, onion powder, garlic powder, and salt into fine crumbs. (Or crush them in a ziplock bag!) Pour into a shallow bowl.
3️⃣ Coat the Chicken: In a separate bowl, beat the eggs and mix with hot sauce. Toss in the chicken to coat. Dredge each piece through the cornflake mixture, pressing to adhere. For extra crunch, double-dip by repeating the process!
4️⃣ Bake: Place coated chicken on the baking sheet, drizzle lightly with olive oil, and bake for 20-25 minutes until crispy and golden.
5️⃣ Make the Hot Honey: While the chicken bakes, warm honey, hot sauce, cayenne, chili powder, onion powder, garlic powder, and salt in a small saucepan. Stir until smooth.
6️⃣ Serve: Drizzle the warm hot honey over crispy chicken and garnish with fresh herbs. Enjoy immediately!
