Ingredients
For the meatloaf:
1 lb ground beef
½ cup breadcrumbs
1 egg
¼ cup onion, finely chopped
1 tbsp Worcestershire sauce
¼ cup BBQ sauce (plus more for topping)
Salt & pepper to taste
6–8 slices of bacon
For the mashed potato “frosting”:
2 cups mashed potatoes (prepared in advance and slightly cooled)
2 tbsp butter
¼ cup milk or cream
Salt to taste
Chives or crispy onions for garnish (optional)
Instructions
Preheat oven to 375°F (190°C). Grease a muffin tin.
Wrap each muffin cup with a slice of bacon.
Mix ground beef, breadcrumbs, egg, onion, Worcestershire, BBQ sauce, salt, and pepper.
Press meat mixture inside the bacon-lined cups. Bake for 20–25 minutes.
Brush tops with more BBQ sauce and bake 5 more minutes.
Pipe or spoon mashed potatoes on top like frosting. Garnish if desired and serve warm!
