  • 1 large egg, room temperature
  • 1 box (15.25 oz) strawberry cake mix
  • 1 tsp baking powder
  • ½ cup vegetable oil
  • ¾ cup white chocolate chips (optional)

  1. Prepare Dough:
    • In a large bowl or the bowl of a stand mixer, combine cream cheese, egg, cake mix, baking powder, and vegetable oil. Mix until a smooth dough forms.
    • Fold in white chocolate chips, if desired.
  2. Chill Dough:
    • Cover the bowl and chill the dough in the refrigerator for 30 minutes.
  3. Preheat Oven:
    • Preheat the oven to 350°F (175°C) and line a large baking sheet with a silicone liner or parchment paper.
  4. Scoop & Arrange Dough:
    • Use a small cookie scoop to drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake:
    • Bake in the preheated oven for 12-13 minutes, or until the cookies are set and the edges are lightly golden.
  6. Cool:
    • Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.
