Instructions
1. Preheat Oven:
- Preheat your oven to 400°F (200°C). Line baking sheets with silicone mats or parchment paper and set aside.
2. Cream Butter & Sugars:
- In a stand mixer with a paddle attachment (or using a hand mixer), beat cold, sliced butter until smooth.
- Add brown sugar and granulated sugar, and beat until creamy, about 1-2 minutes.
3. Add Wet Ingredients:
- Mix in eggs and vanilla extract until just combined.
4. Combine Dry Ingredients:
- Gradually add flour, cornstarch, baking soda, baking powder, and salt to the wet mixture. Mix on low speed until the dough comes together.
5. Add Mix-Ins:
- Fold in M&Ms and chocolate chips until evenly distributed.
6. Shape Dough:
- Using a ¼-cup cookie scoop or a large spoon, scoop out cookie dough and roll into balls.
- Roll each dough ball in Valentine sprinkles and gently press additional M&Ms and chocolate chips on top.
7. Arrange on Baking Sheets:
- Place dough balls on prepared baking sheets, leaving space for spreading (about 6 cookies per sheet).
8. Bake:
- Bake in the preheated oven for 8-12 minutes, until the edges are lightly golden and the tops are just set.
9. Cool:
- Remove the pan from the oven and allow cookies to cool on the baking sheet for 10 minutes (they will continue to cook slightly).
- Transfer cookies to a cooling rack to cool completely.
Tips for Success:
- Cold Butter: Using cold butter helps the cookies hold their shape while baking.
- Underbake Slightly: For a softer, chewier cookie, remove them as soon as the edges turn golden.
- Storage: Store cookies in an airtight container at room temperature for up to 5 days.
