  • ¼ tsp table salt
  • 3 oz cream cheese, softened
  • 1 cup butter, at room temperature
  • 1 cup granulated sugar
  • 1 large egg yolk
  • 1 tsp lemon extract
  • 1 tsp vanilla extract
  • Zest of 1 large lemon
  • Sprinkles of your choice

Instructions

  • Preheat & Prep: Preheat oven to 350°F (175°C) and position the rack on the lower-middle level.
  • Mix Dry Ingredients: In a bowl, whisk together the flour, cinnamon, and salt.
  • Cream Butter & Cheese: In a separate bowl, beat the butter and cream cheese until creamy. Add sugar, egg yolk, extracts, and lemon zest. Beat until light and fluffy.
  • Combine Dough: Gradually blend the dry ingredients into the butter mixture on low speed until just combined. Scrape down the sides and fold in any loose flour. (The dough will be sticky, do not chill.)
  • Shape Cookies: Fill a cookie press or pastry bag according to the manufacturer’s directions. Press cookie shapes onto ungreased baking sheets. Decorate with sprinkles of your choice.
  • Bake: Bake for 9-10 minutes, depending on your cookie size and desired crispiness. For softer cookies, bake less; for crispier cookies, bake slightly longer.
  • Cool: Cool cookies completely on the baking sheet, then remove with a thin spatula.
