Crispy on the outside, gooey and spicy on the inside, it’s the perfect way to turn leftover chicken into something spectacular. Ingredients
✔️ 1 cup shredded chicken
✔️ 2 Tbsp cream cheese
✔️ 1 ½ Tbsp tomato paste
✔️ 3 garlic cloves, minced
✔️ ⅓ tsp cumin
✔️ ⅓ tsp coriander
✔️ ½ tsp crushed red pepper
✔️ 1 jalapeño, chopped
✔️ ½ cup chopped arugula
✔️ Handful of basil leaves (or chopped dill)
✔️ ½ cup shredded cheese (mozzarella works great!)
✔️ 2 flour tortillas
Instructions
1️⃣ In a small bowl, mix cream cheese, garlic, tomato paste, cumin, coriander, and crushed red pepper with a teaspoon of water until smooth.
2️⃣ Stir in the shredded chicken, jalapeño, arugula, and basil (or dill).
3️⃣ Spread half of the mixture onto one side of a tortilla, sprinkle with cheese, then fold in half. Repeat with the other tortilla.
4️⃣ Heat a non-stick pan with olive oil and toast the quesadillas until golden brown on both sides.
5️⃣ Slice into wedges and enjoy as is or with guacamole! 🥑
