Ingredients

✅ 2 cups cooked jasmine rice (cold, day-old is best)
✅ 1 green onion, finely chopped
✅ 2 ½ tbsp soy sauce (regular, not dark)
✅ ½ tbsp sesame oil
✅ 4 large eggs, beaten
✅ 2 tbsp vegetable oil (or neutral oil)


Instructions

1️⃣ Heat vegetable oil in a pan or wok (let it smoke if using a wok).
2️⃣ Pour in beaten eggs and stir-fry quickly until they take shape but are still moist.
3️⃣ Add in cold rice, breaking apart any clumps.
4️⃣ Push everything to one side, add the remaining oil and green onions to the pan, then mix everything together.
5️⃣ Pour soy sauce & sesame oil along the edges of the pan, toss until the rice is evenly coated and golden brown.
6️⃣ Remove from heat and serve hot!
